Lemon Scones

Lemon scones bring a bright citrus flavor to a tender, crumbly pastry. Add lemon zest and a simple glaze for a refreshing dessert or breakfast treat.



Ingredients:


  • 2 cups A.P flour

  • 1/3 cup granulated sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • Zest of 1 large lemon

  • 1/2 cup cold unsalted butter, cubed

  • 1/2 cup heavy cream (plus extra for brushing)

  • 1 large egg

  • 2 tablespoons fresh lemon juice

  • 1/2 teaspoon vanilla extract


Lemon Icing:

  • 1 cup powdered sugar

  • 1–2 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest


Directions:


  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.

  3. Add the cold cubed butter and cut it in using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  4. In a small bowl, whisk together cream, egg, lemon juice, and vanilla.

  5. Pour wet ingredients into the dry mixture and stir just until a dough forms. Do not overmix.

  6. Turn dough onto a lightly floured surface, gently pat into a 1-inch thick circle, and cut into 8 wedges.

  7. Place on the baking sheet, brush tops with a little cream, and bake for 15–18 minutes until lightly golden.

  8. Whisk glaze ingredients together and drizzle over cooled scones.

  9. Sprinkle a little extra lemon zest on top if desired.
