Lemon Scones

Lemon scones bring a bright citrus flavor to a tender, crumbly pastry. Add lemon zest and a simple glaze for a refreshing dessert or breakfast treat.

Ingredients:
2 cups A.P flour
1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
Zest of 1 large lemon
1/2 cup cold unsalted butter, cubed
1/2 cup heavy cream (plus extra for brushing)
1 large egg
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla extract
Lemon Icing:
1 cup powdered sugar
1–2 tablespoons fresh lemon juice
1 teaspoon lemon zest
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
Add the cold cubed butter and cut it in using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
In a small bowl, whisk together cream, egg, lemon juice, and vanilla.
Pour wet ingredients into the dry mixture and stir just until a dough forms. Do not overmix.
Turn dough onto a lightly floured surface, gently pat into a 1-inch thick circle, and cut into 8 wedges.
Place on the baking sheet, brush tops with a little cream, and bake for 15–18 minutes until lightly golden.
Whisk glaze ingredients together and drizzle over cooled scones.
Sprinkle a little extra lemon zest on top if desired.
