Strawberry Shortcake Cupcakes

These strawberry shortcake inspired cupcakes are a fun twist on a classic dessert!



Ingredients:


  • 1 box vanilla cake mix (plus ingredients listed on the box: usually eggs, oil, and water)

  • 1 ½ cups diced fresh strawberries

  • ½ cup strawberry jam

  • 1 can Betty Crocker Fluffy White Icing

  • 1 container Cool Whip (thawed)

  • Fresh strawberries, halved (for topping)


Directions:


  1. Prepare the vanilla cake mix according to the package directions.

  2. Line a muffin tin with cupcake liners and fill each about ⅔ full.

  3. Bake as directed on the box, then let the cupcakes cool completely before filling.

  4. In a bowl, mix the diced strawberries with the strawberry jam until well combined. Set aside.

  5. Once the cupcakes are cooled, use a small knife or cupcake corer to remove a small circle from the center of each cupcake, making sure not to cut all the way through.

  6. Spoon about 1 tablespoon of the strawberry mixture into each cupcake.

  7. In a large bowl, whip the can of Betty Crocker Fluffy White Icing with the thawed container of Cool Whip using a hand mixer for 1–2 minutes until light and fluffy.

  8. Pipe or spread the whipped frosting generously over each cupcake, then top each one with a halved strawberry.
