Green Velvet Soup

This green velvet soup is a smooth, creamy blend of fresh green vegetables gently simmered and puréed until smooth!



Ingredients:


  • 2 tbsp olive oil or butter

  • 2 medium leeks, white and light green parts only, sliced and rinsed

  • 2 cloves garlic, minced

  • 2 medium potatoes, peeled and diced

  • 1 medium zucchini, chopped

  • 3 cups broccoli florets

  • 2 cups kale, chopped

  • 4 cups vegetable or chicken broth

  • 1 cup cream

  • Juice of 1 lemon

  • Salt, to taste

  • Parsley and heavy cream for topping (optional)


Directions:


  1. Heat olive oil or butter in a large pot over medium heat. Add leeks and garlic, sauté until softened and fragrant, about 5 minutes.

  2. Add potatoes, zucchini, broccoli, kale, and broth. Bring to a simmer and cook until all vegetables are tender, about 30-40 minutes.

  3. Remove from heat. Use an immersion blender or regular blender to purée the soup until smooth and creamy.

  4. Stir in the milk or cream as well as the lemon juice. Add salt to taste.

  5. Serve, garnished with a swirl of cream and chopped parsley.
