Broccoli and Chickpea Stir Fry

This broccoli and chickpea stir fry is fresh, flavorful, and packed with plant-based goodness. A quick and satisfying meal perfect for busy weeknights :)

Ingredients:


  • 1 tbsp Butter

  • 3 cups Broccoli florets

  • 2 diced Onions

  • 4 cloves Garlic (minced)

  • 2 cups Chickpeas

  • 3 tbsp Soy Sauce

  • 1 tbsp Maple Syrup

  • 1/2 tbsp Vinegar

  • 1/4 cup Water


Directions:


  1. In a large frying pan or wok melt your butter.

  2. Add in the onions and garlic and cook until softened.

  3. Next add in your chickpeas and cook for 3-4 minutes.

  4. Lastly add in the broccoli, soy sauce, maple syrup, vinegar, and water and cook for 10-15 minutes.

  5. Serve with rice.

  6. Enjoy!🫶🏽
