Roasted Rainbow Carrots

These roasted rainbow carrots are just as delicious as they are beautiful!


Ingredients:

  • 2 bags Rainbow or Regular Carrots peeled and washed

  • 3 tbsp Oil

  • 1-2 cloves minced Garlic

  • 1/2 tbsp Dried Basil

  • 1 tbsp Dried Parsley

  • 1 tsp Salt

  • 2 tbsp Butter


Directions:


  1. Chop your Carrots into your desired shapes And add them into a large bowl.

  2. Next add your oil and spices and mix until the carrots are evenly coated.

  3. Pour them into a pan and cover with tin foil.

  4. Bake at 350 degrees covered for 30-40 minutes or until fork tender and then uncover and bake at 400 degrees for about 10 minutes.

  5. Add the butter and stir.

  6. Enjoy!
