Vegan Blueberry White Chocolate Muffins

These blueberry white chocolate muffins are a perfect fusion of tart blueberries and sweet white chocolate, creating a light not overly sweet muffin!

Ingredients:

  • 1/4 cup vegan mini chocolate chips

Dry ingredients:

  • 2 1/2 cups A.P Flour

  • 2 tbsp Baking Powder

  • 1/2 tsp Salt

Wet ingredients:

  • 1 1/4 cup Maple Syrup

  • 1/2 cup Oil

  • 1 1/2 cups Plant Milk

  • 1 tsp Vanilla

  • 2 cups Frozen Blueberries


Directions:


  1. In a large bowl add all of your dry ingredients and mix lightly.

  2. Next add in your milk, oil, maple syrup, and vanilla and mix until smooth.

  3. Gently fold in your blueberries.

  4. Scoop your batter into a lined muffin tin and sprinkle your white chocolate chips and a few extra blueberries on the tops.

  5. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted into the middle comes out clean.

  6. Enjoy!
