Apple Pie Cupcakes!

Filled with apple goodness, these Apple Pie Cupcakes are the perfect autumn treat:)

Ingredients:
For the cupcakes:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
1 cup sugar
2 large eggs
2 tsp vanilla extract
½ cup milk
Ingredients:
For the apple pie filling:
2 apples, peeled and diced
1 tbsp butter
2 tbsp brown sugar
½ tsp cinnamon
1 tsp cornstarch + 1 tbsp water
Ingredients:
For the cinnamon frosting:
2 sticks of butter (softened)
3 cups powdered sugar
1 tsp cinnamon
2 tsp vanilla extract
2 tbsp milk or cream
Directions:
For the cupcakes:
Preheat the oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
In a bowl, whisk together the flour, baking powder, and salt.
In another bowl, beat the butter and sugar until light and fluffy, then add the eggs and vanilla.
Gradually mix in the dry ingredients, alternating with the milk, until smooth.
Divide the batter evenly among the liners and bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
Let cool completely.
Directions:
For the apple pie filling:
In a small saucepan, melt the butter over medium heat, then add the apples, brown sugar, and cinnamon.
Cook for 5–7 minutes until soft.
Stir in the cornstarch mixture and let cool completely.
Directions:
For the cinnamon frosting:
Beat the butter until creamy, then gradually add powdered sugar.
Mix in the cinnamon, vanilla, and milk until smooth and fluffy.
Pipe the frosting in two rings around each cupcake, leaving a small well in the center for the apple filling.
