Whipped Shortbread Cookies

Buttery whipped shortbread cookies, a classic and cozy Christmas treat!

Ingredients:
1 cup unsalted butter (very soft)
½ cup powdered sugar
1 ½ cups all-purpose flour
½ cup cornstarch
1 tsp vanilla extract
½ tsp salt
Melted chocolate
Holiday sprinkles
Directions:
Cream the butter until it’s extremely light and fluffy, then mix in the powdered sugar and vanilla until smooth.
Sift the flour and cornstarch together and add them, mixing on low just until a soft dough forms.
If the dough is too stiff to pipe, beat in 3-6 tablespoons of milk or cream until it pipes easily.
Fit a piping bag with a large star tip and pipe swirls onto a parchment-lined baking sheet.
Chill the piped swirls for 15-20 minutes so they hold their shape.
Bake at 300°F (150°C) for 18-22 minutes, until the bottoms are light golden and the tops stay pale.
Let them cool completely.
Dip each cookie halfway in melted chocolate, add sprinkles, and place them on parchment until the chocolate sets.
