Coconut Macaroons

A delightful, coconut-packed holiday bite that’s simple, sweet, and perfect for your Christmas cookie tray!


Ingredients:


  • 1 1/4 cups sweetened shredded coconut

  • 1/3 cup sweetened condensed milk

  • 1/2 teaspoon vanilla extract

  • 1 large egg white

  • Pinch of salt

  • Melted chocolate

  • Festive sprinkles


Directions:


  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until fully combined.

  3. In a separate bowl, beat the egg white with a pinch of salt until stiff peaks form.

  4. Gently fold the beaten egg white into the coconut mixture, being careful not to deflate the egg whites too much.

  5. Using a measuring spoon, drop about 1 tablespoon of the coconut mixture onto the prepared baking sheet, spacing the cookies about 1 inch apart.

  6. Bake for 12-15 minutes, or until the edges are golden brown.

  7. Let the macaroons cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

  8. Drizzle with melted chocolate, and add some sprinkles.
