Double Chocolate Peppermint Cookies

A fudgy chocolate cookie sprinkled with candy cane pieces, fun, festive, and perfect for the season!


Ingredients:


  • 1/2 cup unsalted butter, softened

  • 3/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup cocoa powder

  • 1 1/2 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup milk chocolate chips

  • 1/2 cup crushed candy canes

  • 1/4 cup crushed candy canes (for decoration)


Directions:


  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  3. Add the egg and vanilla extract, mixing until smooth and combined.

  4. In another bowl, whisk together the cocoa powder, flour, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Stir in the semi-sweet chocolate chips and crushed candy canes.

  7. Scoop the dough into tablespoon-sized portions and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

  8. Flatten each cookie slightly with your fingers or the back of a spoon.

  9. Bake for 8-10 minutes, or until the edges are set and the centers are soft.

  10. Once out of the oven, sprinkle the warm cookies with crushed candy canes for a festive touch.

  11. Let the cookies cool completely.
