Grinch Sugar Cookies

Sweet, crisp Grinch sugar cookies that are simple to make and fun to share!

Ingredients:


  • ½ cup unsalted butter, softened

  • ½ cup vegetable oil

  • 1 cup granulated sugar

  • ½ cup powdered sugar

  • 1 large egg

  • 2 tsp vanilla extract

  • 2 ¾ cups all-purpose flour

  • ½ tsp baking soda

  • ½ tsp salt

  • Green & Yellow food coloring

  • ½ cup granulated sugar (for rolling)

  • Red heart sprinkles


Directions:


  1. Beat the butter, oil, granulated sugar, and powdered sugar until smooth.

  2. Add the egg and vanilla and mix again.

  3. Slowly add green food coloring until the mixture is a bright Grinch green while keeping in mind that the color will lighten once baked. (You may need to add a few drops of yellow to achieve a more vibrant green)

  4. Stir in the flour, baking soda, and salt until a soft dough forms.

  5. Chill the dough 20-30 minutes so it rolls more easily.

  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment.

  7. Scoop tablespoons of dough, roll into balls, and coat each one generously in granulated sugar.

  8. Place on the baking sheet, leaving space between cookies.

  9. Slightly flatten each dough ball with your fingers or the bottom of a cup.

  10. Bake for 8-10 minutes or until the edges are set.

  11. Press one red heart sprinkle to the top of each warm cookie (it will stick lightly as they cool).
