Macadamia White Chocolate Chunk Cookies

Thick, chunky cookies loaded with macadamia nuts and sweet white chocolate.

Ingredients:


  • ½ cup unsalted butter, softened

  • ¼ cup granulated sugar

  • ½ cup brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ¾ cup white chocolate chunks

  • ½ cup macadamia nuts, chopped


Directions:


  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add the egg and vanilla extract, and mix until fully combined.

  4. In a separate bowl, whisk together the flour, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Stir in the white chocolate chips and chopped macadamia nuts.

  7. Scoop the dough onto a prepared baking sheet spacing each scoop about 2 inches apart, and flatten them slightly if desired.

  8. Bake for 8-10 minutes, or until the edges are golden brown but the centers are still soft.

  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
