Refined Sugar Free Blueberry Crumble Bars

These refined sugar free blueberry crumble bars are naturally sweet, soft, and bursting with juicy blueberries.

Ingredients:
For the crust & crumble:
3 cups all-purpose flour
1 cup rolled oats
1 cup maple sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, melted
1 1/2 teaspoons vanilla extract
Ingredients:
For the filling:
4 cups fresh or frozen blueberries
2/3 cup maple sugar
3 tablespoons cornstarch
¼ cup lemon juicet
In a large bowl mix all your ingredients.
Directions:
1. Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
2. In a large bowl, mix together the flour, oats, sugar, baking powder, and salt.
3. Add the melted butter and vanilla extract, stirring until the mixture is crumbly.
4. Press about two-thirds of the mixture firmly into the bottom of the prepared pan to form the crust.
5. In another bowl, toss the blueberries with sugar, cornstarch, and lemon juice until well coated.
6. Spread the blueberry mixture evenly over the crust.
7. Sprinkle the remaining crumble mixture over the top.
8. Bake for 45–50 minutes, or until the top is golden brown and the blueberries are bubbly.
9. Let cool completely before slicing into bars.
